PRE-ORDER: Wild Alaska Halibut - 5 lbs

Available in 5lb shares, blast-frozen and vacuum packed in *approximate 6-9 oz portions. Wild Alaska Halibut’s firm texture and delicate flavor allows for a wide range of versatility in the kitchen. In other words, get creative! This fish absorbs whatever flavors you’d like to try well. A favorite of mine is making a mayonnaise and curry powder sauce to spread on top of the halibut, and baking under an aluminum foil tent to retain moisture.

These halibut were hook and line caught in Southeast AK from local fishermen out of Petersburg, AK using a method called long-lining (see diagram in photos). Long-lining uses anchors attached to buoys to set ground line on the sea-floor. The ground line has hooks with bait spaced throughout. The line is then hauled back on-board and each fish in cleaned, bled and iced one-at-a-time.
